Mashed Butternut Squash
INGREDIENTS:
- 2 medium-large butternut squash
- 6 tablespoons (3/4 stick) butter, melted
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 1/3 cup packed brown sugar
DIRECTIONS:
- Preheat oven to 400 degrees F. Line a rimmed baking sheet with aluminum foil.
- Place squash on baking sheet and bake 70 minutes, or until a knife can be inserted into squash. Remove from oven and let cool slightly, 15 to 20 minutes.
- Cut the squash in half lengthwise; scoop out the seeds and discard. Using a spoon, remove the flesh and place in a skillet over medium heat. Cook covered for 15 minutes.
- Add the brown sugar, salt, and pepper. Stir to combine for 5 minutes, uncovered.
- Take the squash off the heat and transfer to a casserole dish. Using an immersion blender, blend the ingredients until you reach a smooth consistency.
- Serve immediately or refrigerate for a later time. To reheat, set oven to 325 degrees F and heat for 15-20 minutes uncovered.
