- 1 medium onion, chopped
- 3 garlic cloves, minced

- 2 celery ribs, halved lengthwise, and cut into 1/2-inch-thick slices
- 4 fresh thyme sprigs
- 1 bay leaf
- 2 quarts chicken stock, recipe follows
- 4 ounces dried wide egg noodles
- 1 1/2 cups shredded cooked chicken
- Kosher salt and freshly ground black pepper
- 1 handful fresh flat-leaf parsley, finely chopped
DIRECTIONS:
Chicken Stock
yields 2 quarts
- Place a soup pot over medium heat and coat with the oil. Add the onion, garlic, carrots, celery, thyme and bay leaf. Cook and stir for about 6 minutes, until the vegetables are softened but not browned.
- Pour in the chicken stock and bring the liquid to a boil. Add the noodles and simmer for 5 minutes until tender.
- Fold in the chicken, and continue to simmer for another couple of minutes to heat through; season with salt and pepper. Sprinkle with chopped parsley before serving.
Chicken Stock
yields 2 quarts
INGREDIENTS:
- 1 whole free-range chicken (about 3 1/2 pounds), rinsed, giblets discarded
- 2 carrots, cut in large chunks
- 3 celery stalks, cut in large chunks
- 2 large white onions, quartered
- 1 head of garlic, halved
- 1/4 bunch fresh thyme
- 2 bay leaves
- 1 teaspoon whole black peppercorns
DIRECTIONS:
- Place the chicken and vegetables in a large stockpot over medium heat. Pour in only enough cold water to cover (about 3 quarts); too much will make the broth taste weak. Toss in the thyme, bay leaves, and peppercorns, and allow it to slowly come to a boil. Lower the heat to medium-low and gently simmer for 1 to 1 1/2 hours, partially covered, until the chicken is done. As it cooks, skim any impurities that rise to the surface; add a little more water if necessary to keep the chicken covered while simmering.
- Carefully remove the chicken to a cutting board. When its cool enough to handle, discard the skin and bones; hand-shred the meat into a storage container.
- Carefully strain the stock through a fine sieve into another pot to remove the vegetable solids. Use the stock immediately or if you plan on storing it, place the pot in a sink full of ice water and stir to cool down the stock. Cover and refrigerate for up to one week or freeze.

Oven-Fried Chicken with Yellow Turnip Mash
| Ina Garten's oven-fried chicken, turnip mash, and green beans with shallots |
Oven-Fried Chicken
INGREDIENTS:
- 2 chickens (3 pounds each), cut in 8 serving pieces
- 1 quart buttermilk
- 2 cups all-purpose flour
- 1 tablespoon kosher salt
- 1 tablespoon freshly ground black pepper
- Vegetable oil or vegetable shortening
DIRECTIONS:
- Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
- Preheat the oven to 350 degrees F.
- Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
- Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.
This is bomb.

Buffalo Chicken Bites
Buffalo Chicken Bites
To make the dough:
Original recipe found here
INGREDIENTS:
DIRECTIONS:
To make the buffalo chicken mixture:
- 1 cup shredded chicken
- 1/2 cup shredded cheddar cheese
- 1/4 cup hot sauce
- 4 tablespoons unsalted butter, melted and cooled
- 2 tablespoons packed light brown sugar
- 1 cup warm milk
- 2 1/2 cups all-purpose flour
- 2 1/4 teaspoons instant yeast
- 1/4 teaspoon salt
To make the buffalo chicken mixture:
- Combine the chicken, cheese, hot sauce and butter in a medium bowl. Stir to combine. The mixture may seem too wet, but the chicken will absorb some of the sauce.
- Combine the warm milk and brown sugar in a measuring cup, and stir until the sugar dissolves.
- Add the flour, yeast and salt to the bowl of a stand mixer fitted with the paddle attachment. Beat on low briefly just to combine. With the mixer on low, gradually pour the milk/sugar mixture into the mixer and beat until a rough dough forms.
- Switch from the paddle attachment to the dough hook. Knead the dough for about 5 minutes, or until it is smooth and elastic. You want the dough to clear the sides of the bowl as it kneads-- if it's not, add a tablespoon of flour at a time until it does. The dough should be tacky, but not sticky.
- Turn the dough out onto a lightly floured work surface and shape into a ball. Spray a large bowl with nonstick cooking spray and add the ball of dough, turning to coat. Cover the bowl with plastic wrap and let the dough rise until doubled in size, at least 2 hours or overnight.
To make the bites:
- Preheat oven to 400 degrees F.
- Line a rimmed baking sheet with parchment paper.
- Transfer the dough to a lightly floured work surface and cut it into 4 equal pieces.
- Working with one piece at a time, roll the dough into a 12-inch rope. Use your fingers to flatten the dough into a rectangular shape, then use a rolling pin to roll to a roughly 12x4-inch rectangle.
- Add 1/4 of the buffalo chicken mixture to the lower third of the rectangle, leaving 1/2 inch at the bottom.
- Stretch the bottom edge of the dough up and over the filling, pressing to seal. Starting at the bottom, roll up the dough as tightly as possible.
- Cut the log into 10 even pieces and transfer them to the prepared sheet pan. Repeat with remaining pieces of dough and chicken mixture. Let the bites rise at room temperature (uncovered) for about 20-30 minutes-- the dough will rise slightly.
- Bake the bites for about 15 minutes, or until lightly browned. If desired, brush the tops with melted butter before serving. Serve bites with a side of blue cheese dressing.
- *Note: You can make the bites a few hours ahead of time. Just reheat them in a 350 F oven for about 5 minutes when you're ready to serve.

BBQ Chicken Pizza
makes 2 pizzas
INGREDIENTS:
DIRECTIONS:
- 1 teaspoon instant or active dry yeast
- 1-1/2 cup warm water
- 4 cups all-purpose flour
- 1 teaspoon kosher salt
- 1/3 cup EVOO
DIRECTIONS:
- Sprinkle yeast over 1 1/2 cups warm (not lukewarm) water. Let stand for a few minutes.

- Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and set it aside for 1 to 2 hours, or store in the fridge until you need it.
- *Note: it’s best to make the dough at least 24 hours in advance, and 3 or 4 days is even better.
TO PREPARE IMMEDIATELY for recipes requiring precooked pizza dough (not for the recipe below):
- When you are ready to make the pizza, grab HALF the pizza dough (recipe makes 2 crusts) and squeeze the dough toward the bottom to form a nice, tight, pulled ball. Use a rolling pin to roll out the dough. When the crust is nice and thin, lay it on an oiled baking sheet or pizza pan. Drizzle a little olive oil on the dough and spread it with your fingers. Very lightly sprinkle some salt on the crust.
- Preheat oven to 375 degrees. Top your crust with your toppings of choice. Then bake for 15 to 17 minutes, or until crust is golden brown and toppings are bubbly.
